Overview
Invertase (also called sucrase or β-fructofuranosidase) is a hydrolytic enzyme that specifically catalyzes the breakdown of sucrose (table sugar) into its constituent monosaccharides – glucose and fructose – in equal proportions. The resulting mixture, known as invert syrup, has higher sweetness and prevents sucrose crystallization. Our liquid invertase is produced through submerged fermentation of Aspergillus oryzae, ensuring consistent quality and high activity.

Mechanism of Action
Invertase hydrolyzes the α,β-1,2 glycosidic bond of sucrose (a non‑reducing disaccharide), releasing D‑glucose and D‑fructose. This reaction is widely used in the food industry to produce invert sugar syrup with improved functional properties.

Applications

  • Confectionery: Used to produce invert sugar syrup for candies, chocolates, and fondants – prevents crystallization, improves texture, and enhances sweetness, flavor, and color.

  • Bakery: Added as a preservative to extend freshness and improve product stability; also acts as a humectant to improve dough handling and prevent sticking.

  • Beverages: Improves taste and prevents precipitation in liquid formulations.

  • Alcohol fermentation: Used in the production of ethanol from sucrose‑based substrates.

Recommended Dosage

  • Full hydrolysis: Add 900 g of invertase per 1 ton of sucrose syrup (70% solids, 50°C) – complete hydrolysis in 6 hours.

  • Economy option: Add 400 g per 1 ton of syrup (70%, 50°C) – complete hydrolysis in 12 hours.
